Another episode of WIAW! I love linking up with Jenn from Peas and Crayons for this every week. It is so much fun to see others link up as well. I get so many great meal ideas from seeing what other people are eating!
This morning started off with a Protein shake on the way to CrossFit. I tried to take a picture but it turned out horrible.
After CrossFit I whipped up another round of Paleo Oatless Oats
That Earth Balance Peanut Coconut Spread is SO good mixed in.
Work has been crazy this week so I didn’t remember to eat a snack. The Hubs mentioned he wanted to go out for lunch and we decided on Qdoba. One of the good habits I like to try to stay on top of is looking up nutrition information BEFORE I eat out. I pulled up the nutrition calculator on the Qdoba site and pulled up what I wanted to eat and found a reasonably healthy meal. It included Black Beans, Chicken, Fajita Veggies, Pico de Gallo, Green Sauce and just a dash of Guac (as opposed to the usual heaping spoonful they give you). I also had a few chips with their cheese dip. That stuff is like crack.
I was feeling so off throughout the afternoon. I know that If I am feeling that way and I’m not proactive about dinner plans I’ll end up eating something not so good. So I decided to use my favorite go to easy recipe: Slow Cooker Buffalo Chicken. This is seriously so easy.
See- Seriously, SO easy! One of the “change your life” moments I had with this was when I read somewhere to use your kitchen aid to shred cooked chicken. It was great with this. No tedious pulling apart with forks, just drop the chicken in turn it on low and VOILA!
We used to use this for sandwiches, but now that I don’t eat grains I use it lettuce wraps, salads, or even celery or green beans. Chris likes to put it over Quinoa. Add a touch of ranch and some cheese. This is definitely a staple in our house.
I ate mine over green beans, with a side of celery and some sweet potato fries. So delicious!
I also had a few Triple Chocolate Quinoa No Bake Cookies throughout the day.
I didn’t add in spinach to mine though. I might next time. These are yummy protein packed snacks. This was way outside the box for me, but I’m glad I tried it!

The slow cooker buffalo chicken sounds delicious!

I was a little scared too but now I eat them out of the freezer daily! Glad I visited your blog today so I can have some menu ideas for this next week!

You won’t regret it, it is seriously yummy. It helps curb my cravings for the fried and battered boneless buffalo wings.
I have yet to try out a slow cooker! lol

It is 1/2 banana, egg whites, almond milk, a splash of vanilla and some cinnamon… I love it!
